Méli-mélo of crunchy cabbage, Granny apples & dried fruit

Ingredients

  • 1 white cabbage
  • 1 red cabbage
  • 2 Granny apples
  • 2 260g tins Pâté Hénaff
  • Candied figs and apricots
  • Roasted pine nuts
  • Grape seed oil
  • Sherry vinegar
  • Honey
  • Mustard
  • Fresh herbs
  • Salt & pepper

Preparation

  1. Make a fine julienne of cabbage.
  2. Make the honey-mustard vinaigrette.
  3. Cut 1 apple into brunoise and the other into sticks.
  4. Mix the cabbage with some of the candied fruit, pine nuts, vinaigrette and Granny apple brunoise.
  5. Place 1 slice of Pâté Hénaff and the coleslaw in a circle.
  6. Garnish with Granny apple sticks, remaining candied fruit and fresh herb.

Product used

Tip

To cook Pâté Hénaff, use “young” tins: at least two years before the date indicated on the side of the tin.
